Storage of Food –
Most foods keep better in a cool dry place, not in direct contact with the floor. Use oldest stock first.
Pulses usually keep well for up to one year.
Grains and grain products are susceptible to infestation and are best bought regularly although they can be kept for one year or so if stored well.
Seeds and nuts need to be kept cold as they can suffer from infestation and rancidity. Brazils, Cashews, Coconut, Pinenuts and all roasted nuts should be kept air-tight.
Dried-fruit normally stores well for 6 month, but the fruit sugars are liable to crystallise, particularly in figs. The fruit is still perfectly useable when this occurs. Keep fruit dry as moisture encourages fermentation. Fruit is much easier to pack down when warm. It also helps to tip the fruit into a large container to break it up.
Oil tends to go cloudy when cold, especially olive oil.
Honey will keep for years, but should be rotated as it crystallises and hardens after a few months.
Fresh bananas ripen quickly if kept in the dark. They do not store well in the fridge.
Spinach and other leafy greens will keep longer by keeping then in a cold fridge, in a bag with a drop of water added.
Infestation If this occurs immediately place the goods in a deep freeze for 7 days. This will kill the infestation and prevent contamination of other goods. Should more general infestation occur on your premises immediate consultation with a specialist pest control agency is advised.
Children –
Children in the shop should be supervised by their carers at all times. This is due to the open nature of the food; Health and safety care for others; and for the children as some foods such as kidney beans can be dangerous if eaten uncooked. Carers should be aware that there is no pavement directly outside the shop door and cars do pass quite closely and quickly. A strong warning not to allow children to wander outside of the shop is issued.
